“VERY OLD” ACETO BALSAMICO DI MODENA (AGED 12 YEARS)
This distinguished product is created from grape must which has been cooked for at least twelve hours and then blended with a base of acetified must. After being fully are carefully amalgamated, it is then placed in very small barrels known as “vasselli” and coopered from the finest available woods; the barrels themselves are of various sizes and types of wood. The vinegar goes through a process of regular racking and replacement of the part which has evaporated which lasts for twelve years. It is then tasted and, only when judged of exceptional quality, bottled in quarter-liter (.250 liters) formats and packaged in an elegant, ivory-colored cardboard box.
