Châteauneuf du Pape Red ‘Chaupin’
Location: The peculiarity of this wine is that the grapes it comes from only grow on sandy plots in different parts of the Chateauneuf appellation: Chapouin, Janasse (north), La Crau (south east).
Grapes: 100% Grenache. The oldest vines were planted in 1912.
Vineyard: The vines are grown without pesticides or insecticides and manure is natural. The land is thoroughly tilled in order to keep it ventilated and loose. Yield of 28 hl/ha. Vinification: 80% destemming. Maceration during 26 days and daily punching down. Ageing process: 2/3 in large casks/«foudres» and 1/3 in 600 litre barrels/«demi-muids».
Tasting: The quintessential grenache in its most beautiful expression on his cradle Châteauneuf. Between notes of black fruit and violets, this wine evoluates with very soft tannins already melted. A beautiful bottle, archetype of the appellation, to marry a deer stew today and within the next twenty-five years.
