Le cépage
Syrah.
L’âge des vignes (en moyenne 65 ans) est
garant d’une production de grande qualité.
Le terroir
D’une superficie d’environ 4 ha, la parcelle
qui a donné son nom à cette sélection
parcellaire est d’une géologie très particulière. Elle est
constituée de sédiments sur une fine couche,
reposant sur un sous-sol granitique.
Les vendanges
Récolte manuelle à la limite de la surmaturité. Ces
vieilles vignes assurent un faible rendement.
La vinification
La vendange, égrappée à 100 %, est vinifiée en
cuves béton. Un à deux pigeages par jour assurent
une bonne extraction. La température
de fermentation ne dépasse pas 32° C.
La macération dure de 4 à 5 semaines,
afin d’obtenir une polymérisation des tanins.
Seul le vin de goutte est utilisé pour
cette sélection parcellaire.
L’élevage
En fûts de chêne, avec une moyenne
de 30 % de fûts neufs, de 18 à 20 mois.
La clarification est naturelle.
La dégustation
Robe : rouge intense et profond
avec des reflets violacés.
Nez : goudronné et fumé, framboise,
mûre, noix, réglisse.
Bouche : complexe, attaque puissante,
velouté et équilibré, finale longue, réglisse,
tabac, cacao.
Selon le millésime, le vin peut être conservé
de 30 à 60 ans, voire même de 50 à 75 ans.

The age of the vines (65 years on average)
guarantees a very high quality production.
Terroir
This plot has an area of approximatively 4 ha. It
has given its name to this plot selection and has a
particular geology.
This soil is made up with sediments
on a fine layer being on a granitic subsoil.
Harvest
Grapes are hand-harvested to the limit
of over-maturity. Due to their age,
these vines give low yields.
Vinification
Totally destemmed, the grapes ferment
in concrete tanks. From one to two daily treadings
ensure a good extraction.
The temperature of fermentation does not exceed
32°C. Maceration lasts between
4 and 5 weeks, to obtain a polymerization of
tannins. Only the free-run wine is used for this
single vineyard.
Maturing
The wine is matured in oak casks
(with a 30% average proportion
of new ones) between 18 and 20 months.
The clarification is natural.
Tasting
Colour: deep garnet red with purple lights.
Nose: tarry and smoky, raspberry, blackberry,
walnut, liquorice.
Palate: complex, strong attack, velvety
and balanced, long final, liquorice,
tobacco, cocoa.

"Opaque purple. Red and dark berry preserves and candied flowers on the seductively perfumed nose. Juicy, deeply pitched black raspberry and blueberry flavors are complemented by notes of violet, rose and licorice. Offers an uncanny blend of richness and vivacity, with a seamless texture and no excess fat. Closes on a peppery note, with persistent florality. I find this highly seductive wine surprisingly open right now."

""Glowing dark crimson. Burnt tarry whiffs on the nose. Complex vine stumps on a bonfire. Then an unctuous palate entry. Very clever. You really do have to take your hat off to Michel Chapoutier and team for producing these gems, each one so different from the last and chock full of character. Wonderfully graceful polished tannins and great length. They make all but a handful of 2009 red bordeaux look a little predictable. Great depth and velvety texture. Smoke but not mirrors. It’s all real! You could actually drink this with pleasure already but it would be a massive waste of all that unrealised potential. " "
