AOC Bourgogne"En Bully"
A great Burgundy red wine, the grape variety used is Pinot Noir. The Bourgogne rouge is grown at an altitude of 350 meters on the slope facing les Hautes-Côtes on the locality named La Grande Corvée de Bully. The soil here is marly with a shallow top-layer.
Bully was an ancient property, no longer existing, which at the time belonged to Abbaye de Maizières. The term Bulliaco from 925, derived from "bubbles", refers to the existence of a gushing spring (Fontaine Bully) close by. La corvée, a term used under the feudal system, designates the days of work owed by the tenants to the monks of the Abbey.
Red wines vinification : We aim to obtain fruity wines, rich in blended tannins, which is the mark of well ripened grapes. We bring in the grapes in small crates for careful sorting in the winery, a conveyor belt enabling us to fill the tanks without damaging the grapes. The fermentation lasts 15 days with pigeages, punching down of the cap, allowing the wine to soak up the richness and the colour from the grape-skins before pressing. Ageing takes place in barrels of which 20 % are new. Racking by the means of a bellow eliminates the need for a pump. All these precautions limit handling of the grapes and the wine as much as possible, thus preserving all the richness.
You will discover a red wine with a deep garnet hue whose bouquet "pinotes", revealing notes of cherry and raspberry. It is ample and generous, the silky tannins ensuring a velvety character which persists on the palate. Excellent with leg of lamb or a nice cut of beef.
